Definition of Quality
This information is covered over three modules whose criteria for a high quality final product. Included are quality and yield grades, carcass measurements, the importance of avoiding injection site lesions, and delivering a quality product.Manage for Quality
Information includes how day-to-day management practices affect the quality of beef. Topics include proper castration, dehorning, branding and maintaining records. Another component of this module is financial management and record keeping.Handling and Well-being
This chapter deals with a real “hot button” issues that have been in the news quite often. The educational module begins with the theory of the animal well-being movement. Additional information provided is design factors in cattle handling/living areas, handling precautions, and general animal husbandry concerns.Sire Selection and Genetics
This chapter involves the selection of a sire using the “Power Score” method.
